        <content>Does anyone know where I can buy Versa-Whip (it's trademark name) in NYC?  I'm not a professional chef and need some.  I guess i could use xantan gum if I had to, but a chef told me this stuff has a better taste.  Need to know by Monday, Jan. 21st.  Appreciate any leads!  </content>

      <content>Not that I know anything about baking or versawhip, but I do know there are a couple of baking shops in the flatiron district -- I've walked by one in the teens or 20s, between 6th and 5th aves, maybe?</content>

      <content>Not sure what you're doing exactly, but I know Alex Stupak and Sam Mason have made "meringues" by using xanthan gum and methylcellulose-whipping it in a stand mixer.  Check out Ultratex-3/8 too-It's similiar to xanthan gum with a better mouthfeel. National Starch will send you a free sample if you go to their website. </content>
