Interesting potato recipes?
I know this is a little late, but maybe you can try it the next time you make potatoes.
Peel and cube 2 pounds of potatoes. Cook in large pot of water with a couple cloves of garlic thrown in until tender. Drain and mash. Add 3 egg yolks, 3 tablespoons butter, salt and pepper and 1/4 cup of another your cheese of choice, i.e. gorgonzola, fontina and mix. Put potato mixture in a pastry bag with a large sawtooth tip. Pipe into decorative mounds onto buttered baking sheet. Bake in 375 degree oven for 8 -10 minutes until lightly browned.
