A Salad with winter veggies

I am cooking with my friends and I have been assigned Salad. Anyone have at tried and True recipe for a salad with winter veggies. I saw a few on epicurious that I like with fennel. If you have any ideas let me know.
Oh the main course is saltimbocca ala romanga with risotto

  1. I like to roast veggies like butternut squash, sweet potatoes, red onions, broccoli and zucchini, and then toss them with mixed greens and top with goat cheese and some type of vinaigrette. mmmmm

      Wow, this was exactly what I was going to suggest!

      I like to roast butternut squash, sweet onion, and parsnips tossed in a little oil + balsamic vinegar, s & p at 425F for about 20 minutes. Serve on a bed of arugula, add toasted walnuts and goat cheese!

        Put the goat cheese on grilled slices of baguette and run them under the broiler. Serve alongside, instead of croutons. Apple cider (in season now) vinaigrette is good, as is the addition of some dried cranberries.

      2. I had an excellent salad recently with roasted kabocha squash. This is my new favorite vegetable. Very similar to butternut and can be prepared the same way but the taste is so much richer, IMO

        1. Roasted chioggia beets with shaved fennel, goat cheese, orange wedges, and candied walnuts, tossed with a vinaigrette and served on greens. Yum.

            That sounds wonderful. I've been making Goin's roasted beet salad with horseradish cream a lot lately, and should branch out a bit on the roasted beets!

            1. Beets beets beets! Its a perfect winter salad base. I recently ate a delicious salad of roasted beets, mandarin orange segments, and slices of rare duck. Mmm!
