I don't know about fresh scraple, but I once got a package of it frozen from a crash-and-dent shop. So someone in the area must stock it.. It's unlikely that anyone makes it locally, so your best bet may be to make it yourself. An Asian or Mexican grocery would be your best option for the miscellaneous pig parts. It's just cornmeal cooked in pork broth (with added scraps, right)?
The wiki article on Taylor ham claims De Laurenti’s carries it.

Pop "Taylor Ham" or Taylor Pork Roll" into google and you can get it delivered to your door!
I'm originally from NYC, living in Portland, OR now. But I remember going to Asbury Park as a kid with my dad and there was a place on the boardwalk that sold Taylor Pork Roll. There was a grill along the back wall behind the counter with a slow moving set metal clamps that ran over/along the grill. They'd clamp a thick slice of pork roll in a set of special tongs that fit into those clamps and the pork roll slice would make it's journey down that grill, turning as it went from one end to the other. When it got to the other end, they would remove it from the tongs and slap it into a bun. I can still remember that awesome flavor of the crusty, slightly singed pork roll...washed down with a birch beer...YUM! (Then it was over to Kohr's Frozen Custard for a soft, rich cone of frozen goodness.)
Damn, thinking about this makes me want some too! ;o)
