Not an update, but for a good substitute, there's always Pondok Kaki Lima @ The Duarte Inn.
It's an Indonesian food fair, similar, but smaller in scope to the Wat Thai. And it's not going away anytime soon. Every Saturday from 10 am to 2 pm (or whenever the food runs out).

There's not, so far as I know, any plan to resurrect it except at major festivals (like Songkran).

they've had it for at least one major thai festival/holiday (i forget which) since the weekly thing shut down. i would imagine they'll have it a few times a year. some of the vendor's are also selling in the king seafood (i think that's the name) on the north side of sherman way just west of the 170 fwy. not really the same but good if you wanted to pick up some of the desserts or som tum etc to take home.
