      <content>Definitely plan on making penil your centerpiece: a glistening shoulder of pork marinated in garlic, citrus and herbs. With that you might serve arroz con mais (rice sauteed with sofrito and corn niblets), tostones (twice-fried plantains), pasteles and salata a la criolla.</content>

      <content>Check out Daisy Martinez- she has a show called Daisy Cooks.  I believe there are some recipes on her website.  Her yellow rice is SO good!  I have a bunch of her sofrito recipe in my freezer for said yellow rice.  I know this isn't really and appetizer but it's so good.</content>

Alcapurrias make a good appetizer as do Rellenos de Papa.  Actually, a lot of what is listed under FRITTERS - FRITURAS makes for good appetizers. (Daisy Martinez makes very good alcapurrias. She made them on the episode with Esmeralda Santiago as her guest).

Most of the main course foods are relatively inexpensive when it comes to Puerto Rican cooking.  You can make any of the pork and chicken dishes as your main course and not have to break the bank. I like the pernil recommendation as long as you're certain that your guests will eat pork ...  otherwise,  go ahead and take the liberty of making chicken.      </content>
