        <content>What brands (and models) of cookware have roughly a 4-5+mm aluminum layer all around (not only the base)? 

Some of my hard anodized calphalon commercial cookware is ~4-5mm.
I know AllClad's LTD and MC line have roughly 4mm total, but I don't want to spend that much money on their stuff (even with the outlet/irregulars pricing)</content>

      <content>The commercial stuff from Vollrath, Wearever, Toroware is probably that thick. You might find it a Sam's Club for very attractive prices. Of course most of it (especially skillets) are going to be non-stick. Not sure if any hard anodized stuff is available...</content>
