cleaning professional cast iron stove top?

G'day all!

this is a quick post to find out if anyone here has a professional stove with a cast iron top and what is the best way to really clean to built up sticky goo and spills. I have had the stove for about 3 years but I only ever seem to get it half way as clean as I would like. I can remove them. I used "Bam!" on the pull out tray and that does a good job but it is stainless. Iwould love to get them really clean after the big cooking holiday!

  1. You have several choices. If your oven has a self cleaning feature, just place the grates into the oven and run a clean cycle. They'll come out like new. You can also use oven cleaner and a scrub brush on them. This is the way they would be cleaned in most restaurants, or lastly, take them to a self serve carwash and pressure wash them. In many restaurants everything gets pressure washed at the end of the night. And, if I misunderstood your question and you're asking about a griddle which can't be removed, go to any restaurant supply store and ask for a grill brick. Put a little oil on the griddle and scrub with the brick. It won't take but a few minutes and the griddle will look like new. Hope this helps.
