vegetarian kibbeh recipe
i am looking for a vegetarian kibbeh recipe in a tomato sauce. any suggestions?
This is a lebanese dish I learned to make while I worked in a now closed but great restaurant several years ago.
Soak 1/2c of cracked bulgar wheat (get the smallest you can find) in 1 3/4c very hot veggie stock for 60-90mins.
To the soaked and drained bulgar add 2 cloves minced garlic, juice of 1 lemon, 3T minced red onion, 2T good olive oil, 1/4c chopped flat leaf parsley and at least 2T tomato paste (until it is dark red when formed into a cake) stir well then fold in 2 chopped tomatoes. Press into a cake and serve with arabic bread, pickles, onions, and lebni (arabic kefir cheese).
