Recipes to use Trader Joe's seafood?
I am hoping to make a simple dinner using frozen seafood from TJ's--either the seafood blend (scallops, shrimp, etc) or just straight shrimp. Ideas? Ideally, it will be something that can be prepared ahead and then reheated before serving.
Scallops and shrimp don't really take kindly to reheating because they cook incredibly quickly.
Whatever else you make, the shrimp and/or scallops will cook in all of about 3 minutes if defrosted first. So you could reheat the rest of the meal and/or sauce and then cook the seafood last minute without taking much time.
Yep not so sure about reheating the seafood as well. I recently made some TJ's uncooked tail on shrimp marinated and grilled with some veggies in a grill pan. Then I topped that on some TJ's jasmine rice - very simple and fast meal.
I have to chime in with the others and say that I don't think I'd try reheating frozen seafood. I think you'd end up with mush. That being said, though, as ccb said, shrimp/scallops take NO time to cook - why not prep the rest of the dish ahead of time, then cook the seafood "fresh"?
