Marcella Hazan's Lasagna, double portion?

I made a batch of ragu sauce yesterday and don't think it is near enough sauce for making Lasagna....So I am making a double batch today and was wondering if I need to double the wine and milk?. I imagine I should but it seems like a lot. Original recipe calls for 1 cup each for 3/4 lb meat. Thanks.

  1. when jfood makes double hazan bolognes he doubles everything, so yes double the liquids as well.

      Thanks jfood... It would have broken my heart if I spent the next 4 hours or so babysitting the pot and I had screwed it up!

    2. I often double the recipe for Hazan's ragu just to have some on hand in the freezer and agree with jfood that doubling all the ingredients is the way to go.

      But I'm curious about why you think a single batch is not enough to make lasagne. Are you making Hazan's recipe? A single batch of the ragu is definitely sufficient for her Baked Green Lasagne with Meat Sauce, Bolognese Style. As she says, it's all about the pasta; the fillings shouldn't overwhelm the glory of the noodles.

        As I am not using fresh pasta sheets ( which I know would make it awesome as they are much thinner ) I thought more sauce would be needed?

          I've only made her lasagne with homemade noodles so I really can't answer your question. What I can say is doubling the Bolognese most certainly is not going to hurt. Go for it, and let us know how it turns out.
