Marcella Hazan's Lasagna, double portion?
I made a batch of ragu sauce yesterday and don't think it is near enough sauce for making Lasagna....So I am making a double batch today and was wondering if I need to double the wine and milk?. I imagine I should but it seems like a lot. Original recipe calls for 1 cup each for 3/4 lb meat. Thanks.
I often double the recipe for Hazan's ragu just to have some on hand in the freezer and agree with jfood that doubling all the ingredients is the way to go.
But I'm curious about why you think a single batch is not enough to make lasagne. Are you making Hazan's recipe? A single batch of the ragu is definitely sufficient for her Baked Green Lasagne with Meat Sauce, Bolognese Style. As she says, it's all about the pasta; the fillings shouldn't overwhelm the glory of the noodles.
