Do you mean the sprouts that grow out of garlic bulbs when stored for too long
    or
the 12-16 inch long stalks with bulbs , sold in asian produce sections ?

I use them for garnish on pastas and shrimp scampi. They never tasted bitter to me....

Lots of people say that the sprouts are bitter and should be thrown out, but I never found that to be the case, and felt vindicated when I saw Mario Batali touting them on Molto Mario once lo these many years ago as the base or main ingredient for a particular dish. I can't remember what the exact item was, unfortunately, but I'd put them in a strong-based broth and cook them slowly so they don't burn. You might cut them into short lengths, if they're long. Let us know what you end up doing and if it was great!
