      <content>I'm not sure about how they are made at that restaurant, but it's probably something similar to this recipe, substituting panko or just seasonings for the coating mix, and either deep frying or baking to a golden brown.

Golden Fried Tofu
Ingredients

1 lb firm tofu 
1 1/2 Tablespoon Sesame cooking oil

Coating Mix
1/4 cup flour
1/4 cup sweet rice flour
1/4 cup cornstarch
1 teaspoon black pepper
1 teaspoon salt
1 teaspoon garlic powder
1 sheet pressed seaweed (nori)
1/2 teaspoon fine ground red chili powder

Preparation

Rinse tofu, wrap in several layers of paper towel, place a weight on top (juice or soup can in a plate) and let drain for 20 minutes.
Cut into roughly 3/4 inch cubes.
Crumble the seaweed sheet into small flakes.
Mix all coating ingredients in a medium mixing bowl.
Thouroughly coat tofu cubes with coating mix.

Cooking

Preheat a flat fry pan lightly coated with the cooking oil over medium high heat for one minute.
Add a single layer of coated tofu cubes and fry until golden brown on all sides. Repeat until all tofu is cooked.

Serve hot drizzled with butter or honey as a snack, or room temperature, garnished with chopped chives or green onion and a sweetened soy dipping sauce as a Ban Chan dish.

      <content>Moosewood Restaurant Simple Summers has a recipe for tofu croutons. The tofu is cut into 1-inch cubes and stirred in a marinade of olive oil, soy sauce, and spices. Then the cubes are baked at 450 for 25 minutes.</content>
