What to do with Standing Rib leftovers

PartyGirl43 Dec 26, 2007 01:15 PM

So theres only a litttle bit left maybe a pound (froma 6lb roast). Do I just reheat? Cut for a sandwich? Make it into something different. Any help would be appreciated.

If you have any mashed potatoes left, you might also consider a Shepherd's PIe, traditionally made with leftover roast lamb/mutton but leftover roast beef would also fit into "authentic" from what I've learned.

My first choice would be a nice thinly sliced sandwich with crusty bread, maybe a french dip.

Consider nice julienne strips for an added touch to salads or.....

Last, try adding nice julienne strips of roast beef to a bowl of Asian Style soup of Ramen or Rice Porridge(Congee). Prepare your soups firsts and add to the top of the soup just before serving. Please do not over-cook the beef in the broth. Adding it at the end will gently warm it and remain moist and tender.

My friend whose kids don't like "that bloody meat" just turned hers into hash!
