The company I work for held their Christmas Party at one of those "prepare your own meal and let us do all the prep and clean up" places. I had never been to one before, but let me just say that having a couple of extra entrees on hand in the freezer to just thaw and throw in the oven were extremely helpful over the holidays, and I've been planning on preparing some of my own meals like this before the next semester of school starts. But, I'm torn about the following things and am wondering if anyone can help:

- Is it considered bad sanitation practice to freeze raw meat in it's own marinade and later thaw it out in the fridge before throwing it in the oven?
- One of my entrees was a pasta dish with a cream sauce (where the cream sauce was a mixture of sour cream, heavy cream, butter, and cheese- at least this is what they told me). This dish didn't make it past the first evening, so I didn't freeze it - can I freeze cream/sour cream without ruining it?

First, let me inform you that I am no expert, but in my opinion I don't think freezing meat in a marinade is a dangerous thing to do. You throw the marinade away before cooking anyway. I also don't think that freezing heavy cream and sour cream is a good idea. I believe it would separate when defrosted. The cheese is an iffy factor , too. Depends on the type of cheese. But I am not an expert. Hopefully someone who is can chime in here!
