Please help.

I am going to cook a pot roast and would like to know, is it ok to brown the roast with the butchers twine on it? Is this an ok thing to do?

      Yes, Amy - keep the twine on. That will keep the meat together and help it from falling apart during cooking. Cut it off before serving.

        Amen. I've learned to tie up meat I'm going to braise, if it's not tied already. That business of holding the meat together isn't just an esthetic thing, but actually helps to keep the juices inside the meat. Makes it easier to handle and turn over when you're browning it, too.
