Spring Hill Pumpkin Quark - Like Pumpkin Cheesecake

Spring Hill Cheese, from Petaluma, which sells at many Bay Area farmers' markets, has added a really delicious pumpkin quark to their regular lineup for the season (I also like their lemon quark a lot). It tastes like a light pumpkin cheesecake - creamy, subtly but definitely pumpkin flavored. It's a great snack spread on a graham cracker or, especially, anything gingery. It would make a great icing for gingerbread or carrot cake, come to think of it, but I've just been having it for snacks or breakfast.
