That;s a challenging request. I used to be able to get all of that good stuff at Karl Ehmer, but they closed up shop. Then I was able to get at the Bay Ridge location. They they closed. Now, I usually make the trip to Schaller and Weber in Manh and stock up.I would think some of what you seek can be found at an Eastern European Deli so you might want to expand your search a bit Also, a new Russian Supermarket opened on Amboy Rd. They have more different kinds of salami than I have ever seen anywhere. Maybe they carry some of the things you are looking for. Might be worth your while to check.
