defrosting a turkey

mine is 12lbs - how long to defrost please?

    Coincidentally, I just finished watching America's Test Kitchen where this was addressed. They recommend 1 day per 4 pounds in the refrigerator, so for a 12 pound turkey, 3 days.

        Yes and then if your fridge is really cold, could be it is even frozen still. Glad I checked mine. It was frozen inside yet, and so a day in cold water, did the trick.

      Thawing a Turkey:
      Leave turkey in its original moisture-proof wrap and place in refrigerator.

      Ready to cook weight Days in refrigerator
      4 - 12 pounds 1 - 2 days
      12 - 20 pounds 2 - 3 days
      20 - 24 pounds 3 - 4 days

        In my experience it takes longer than the above numbers. I have a 16 lb turkey that we put in the refrigerator 48 hours ago, and it is still *hard* to the touch and only just beginning to defrost. The chart above would imply that it should be ready to go in the next 12 hours or so. It's going to need the two more days it's got (and maybe then some). The "one day per 4 lbs" given above seems a lot more on the mark.

        I use the 5 hours per pound rule. That's more or less 4 pounds a day, just a bit more specific. And chef chicklet is right. You will need to adjust that if your fridge is really cold, as is mine.
