Unfortunately, I can't get much more info on it.  To my knowledge, it's just a fine sieve so that you can clarify your stock/broth for consomme.  But it somehow limits the water you need to cook with?  Also, shouldn't the finer the mesh, the more expensive it should be?  The more microns something has, the finer it is, and the more expensive it is, right?

      <content>no, i think it's the other way around, the 100 micron would be the size of "each" hole.

so a 50 micron would be a finer mesh than a 100 micron or a 400 micron.</content>
