Enough of artisanal bread that shatters all over the kitchen (does Amy's Bread come to mind?). The best potato bread (rolls) I know were baked at Ninth Street Bakery in Durham, NC, now defunct. A very light egg wash, tight but supple crumb and moist and just cooked inside. Their sunflower rolls were terrific too, and hot cross buns at Easter. Gone but not forgotten.
