looking for a recipe to go with my handmade pieroggi. Want to make and stuff casings. Looking for a good traditional recipe with lots of garlic. Don't live where I can get a real sausage. MAde one other time but i used a spice blend I bought at a butcher supply store - i would like to season myself this time. So actual process not as important as ratio of spices per pounds of meat. Last time I used moose which was amazing none this time however.
