Adding herbs to cheese puffs

I have a recipe from a Gay Lea booklet for Cheese Stars. The ingredients are listed below but I would like to add some herbs (oregano, rosemary, etc) to the dough to make it more interesting. Can anyone comment on what kind and how much of the herbs I could add in, and whether I'd need to adjust any of the other ingredients as a results?

1/2 cup (125 ml) GAY LEA Butter (Salted), softened
2-1/2 cups (625 ml) shredded Mozzarella cheese
2 tbsp (25 ml) grated Parmesan or Romano cheese
1-1/2 cups (375 ml) all purpose flour
1/4 tsp (1 ml) each salt and pepper
2 tbsp (25 ml) milk
