not new but the chocolate place in Bellagio, (I forget the name, starts with Phillipe I think) around the corner from the conservatory, is fabulous.

definitely do not miss Payard in Caesar's. They have a 4 course dessert tasting menu that looked absolutely divine! The menu is divided into fruits, cheese/nuts, chocolate and a 4th category. Each category has several selections with optional wine pairings. We would have gone here for dessert except our schedule didn't permit. We did make it for breakfast twice and their brioche French toast w/ berries and chocolate Belgain waffle w/ sauteed bananas were breakfast desserts in and of themselves!
Next door in the take out cafe, they have gelato, crepe station, pastries, coffee and all their chocolates for sale. We got a chocolate croissant and brioche w/ candied orange peel for the airplane back home.
