Quality Cooking Classes

Contrary to what I'd expect, my interests in food seem to be drifting to my own kitchen more often lately.
i'm thinking it might be fun to take a cooking class in the new year, to learn some "official" technique but also just to explore a bit.

since there seem to be many places to take classes in the city, anyone have recommendations or complaints about particular programs?

(i'm not looking to go to full-on culinary school or anything like that. just a fun evening/weekend class for a couple of months or whatnot.)

    Institute of Culinary Education has a huge selection of classes in their recreational division. Also New School has some continuing ed type classes.

      I second ICE. My fiancee and I have taken several classes there. Huge selection from basics to advanced stuff and specific cuisines.
