Buffalo - MSP

We're looking to buy half of a buffalo. Any ideas where we'd look? Thanks in advance!

    Big Woods Bison sells at the St. Paul Farmer's Market. I saw a sign at their booth once that said they sell 1/4 and 1/2 buffalo packages.

      I'd start with Eichten's Hidden Acres in Center City, MN. They supply the buffalo for many Twin Cities stores and restaurants.

      And I have a pound of buffalo in my freezer from Lofton Ridge, Chisago City. I think I bought it at Farm In The Market (Midtown Global Market) - you could give them a call to see where they get their buffalo. Or see this web site for Lofton Ridge's contact info:

        ditto Anne's recs. i believe eichten's is the largest bison farm in the state. you'll want to say bison on the phone, not buffalo, they'll correct you right quick! :)
