Buffalo - MSP

We're looking to buy half of a buffalo. Any ideas where we'd look? Thanks in advance!

  1. I'd start with Eichten's Hidden Acres in Center City, MN. They supply the buffalo for many Twin Cities stores and restaurants.

And I have a pound of buffalo in my freezer from Lofton Ridge, Chisago City. I think I bought it at Farm In The Market (Midtown Global Market) - you could give them a call to see where they get their buffalo. Or see this web site for Lofton Ridge's contact info:

For more possibilities, see the Minnesota Grown directory. Wonder of wonders, it's searchable online! (So now I don't need to lug around their printed directory at the State Fair!)

ditto Anne's recs. i believe eichten's is the largest bison farm in the state. you'll want to say bison on the phone, not buffalo, they'll correct you right quick! :)

    2. Big Woods Bison sells at the St. Paul Farmer's Market. I saw a sign at their booth once that said they sell 1/4 and 1/2 buffalo packages.
