Does anyone know where I can get pasteurized shell eggs in Rhode Island, southern Mass, or Northern CT? I'm making egg nog for a cookie swap party next weekend, and I'd rather not serve undercooked eggs en masse.
This may not be the answer you're seeking, but I've heard of using Egg Beaters or other similar egg substitutes in such recipes. All of these products are pasteurized, and most contain just egg whites and some color. A while back, I had a Caesar dressing made from this stuff, and it wasn't bad.
