        <content>I just don't think there's a better way to start a busy morning than with a breakfast burrito. When I used to live in Colorado, they were everywhere... now I'm in New York, and I just don't see them around. Plenty of egg sandwiches, but I want chilies and potatoes.

I've made my own (clearly it's not so hard), but they take a little too much effort and dirty pans for me on a work morning.

Does anyone have any advice about freezing these little bundles of joy? Do scrambled eggs freeze and defrost okay? Anything I should know about how much to cook the eggs if they're going to be reheated? I plan to reheat in a toaster oven- we don't have a microwave.

Oh, and the cheese too? I can't think of a time I've frozen cheese really... 

Has anyone already tried this? Do you have a good recipe (and by recipe I mean to include the kind of recipe that's  just a list of guidelines and general ingredients)?

      <content>Cheese and potatoes freeze with no problem - my concern is the eggs after cooked.  My rec is to do a weekend test.  Make four of them maybe with the eggs cooked at different levels and then reheat and see how it goes.  I'd definitely freeze them in aluminum foil but spray the foil first so they don't stick when you reheat in the toaster oven (which is the way to go - eggs, especially reheated eggs, in the microwave are not good news).

FYI - I believe freshdirect has reheatable breakfast burritos, as does Trader Joe's (I think?!)

      <content>Thanks for the advice... I've been doing a bit of internet searching since I posted this, and freezing cooked eggs does not sound good. One site suggested mixing in a bit of sugar... not sure about that. But I guess I'll take your advice and try a few samples over the weekend. We'll see!

      <content>I have not had any experience freezing breakfast burritos; however, I love my chorizo, scrambled egg, and carmelized onion burritos with a schmear of sour cream.  My burritos will typically taste pretty good for 3-4 days in the fridge.  So you could make them Monday morning (or Sunday evening) and they could last until Thurs. 

The key is to slightly undercook the eggs because you are reheating and don't want them way overcooked.</content>

I've made burittos and froze them with much success.  Only difference is I did reheat in a microwave. I think the wrapping in alluminum foil is your best bet and maybe even rewrapping in saran wrap.  Remove the saran before you heat.  

Trader Joe's does sell a good breakfast buritto.  I've had other brands as well, can't remember the brand.  

When I worked in CA we had a "roachcoach" come to our building and that woman made the best breakfast burittos on earth.  Probably weighed a pound and a half a piece.  Grilled potatoes, sausage, eggs, cheese, salsa, fried peppers and onions. They were the best.</content>
