Pre-K, Commander's had a table in the kitchen for 6 guests (no more, no less) and the food was chef's choice- last time I went I think we had about 7 or 8 small courses- not sure if you can still book this but it's worth a call to find out
Delmonico used to have a small dining room (Cornstalk room, I think) that was a little secluded- you had to walk thru the kitchen and got a little tour then were seated in relative privacy (3 tables at a time or so)
Cafe Adelaide does a chef's & bar menu- 5 or 6 courses paired with a cocktails- this can be had at a private table
that's all I can think of right now...but if you're looking for the ultimate (IMO) private dinner with a chef I would pick the New Orleans cooking experience...$150 pp - 4 or 5 courses and unlimited wine

The "chef's tasting" at August was great. Not exactly a "chef's table," but a very good tasting. For the wine, I'd look over the half-bottle list and go with it. Unless there have been major changes, the "pairing" is not something that I'd do again. Nothing really worked with the course, with which it was served. If you opt for that route, keep a bit of each wine, as I found other courses did better. Unless I could be convinced otherwise, I'd go with the half-bottles and do my own pairing. The idea is great, and we do it often, all around the globe, but August needs some serious work with this aspect. Remember, as I said, the food was great!
