Alligator Meat
Hey Hounds.
So I have a pound of alligator meat in my freezer that I need to use up.
What should I make with it. I usually make gator fingers with some sort of dip but I wanted to try something different. Perhaps an alligator stew or something like that.

I made alligator etouffee using the recipe posted on this thread (http://www.chowhound.com/topics/372122) cutting it in half and swapping alligator for crawfish and chicken stock for seafood stock.
You can't imagine how good it was. It was absolutely fantastic. It's one of the best things I've ever made I think.Thanks again

There is a place here that cuts up tail meat to pieces that are about 1/2 inch and blackens them (I am sure you can google a good blackening seasoning) in either a hot cast iron pan or on a griddle. They serve said gator kibbles with a horseradish mayo type dipping sauce. It is pretty fine.
