I have four kaffir limes. What should I do?

They fell off my kaffir lime tree a week ago and have been sitting resentfully in the fridge ever since. I can't let them rot. I think I'll get more zest than juice out of them. What recipes do y'all like that use about 4T of lime zest?

  1. You could zest them into sugar, rub the oils of the fruit into the sugar and then make a caramel saucetart filling. Topped with meringue, the kaffir flavor is lovely.

    1. Use the zest anyplace you would also use the leaves, e.g. stir fries, soups, salads, etc. Start with a little bit at a time as the flavor is quite intense.

      The juice is best used very sparingly.

      1. If I had a handful of kaffir limes I would be making Tom Ka Gai. Yum.
