Buford reviews three Cookbooks for Carnivores

The River Cottage Meat Book is fantastic. Beautiful pictures, and a nice balance between technique, recipes, and philosophy. Great book to leave on the coffee table when vegetarians are coming over to visit.

Buford also reviews the Au Pied de Cochon cookbook, and "Pork & Sons" by a butcher who hails from a long line of butchers.

    Great review, thanks for the link. I just picked up the River Cottage Meat Book and I too absolutely love it (the original cookbook is next). The other two books Buford reviews sound very interesting, although "Pork & Sons" seems more compelling for cooking with
