Yet Another Cocktail Party......
I am hosting my 1st holiday cocktail party. I have had many parties but never a cocktail party. It's going to be at 5:30 on a Saturday night in dec.
I have 30 people invited.
Here is my tentative menu. Please feel free to critique:
pizza dip (my friends can't get enuf of this stuff)
s&s meatballs in the crockpot
brie with hot carmel sauce
spinach feta filo cups
ROOM TEMP or COLD
cheese platter with grapes and crackers
cranberry cream cheese spread
pear and gorgonzola crostini
seafood sald on endive leaves
proscuitto wrapped thin breadsticks
triple choc gingerbread cake
lemon lime tarts
assorted christmas cookies
Fantastic menu! I think you have a great balance of hot and cold, veg and meat. Making the martinis in a pitcher ahead of time is a good time-saver if the recipe is agreeable.
If you have time, would you mind sharing your recipe for the brie with hot caramel sauce and olive straws?
Good luck and enjoy!
For the olive straws I cusineart calamata olives and a little olive oil, I then take puff pastry sheets and spread the olive on and add a top layer, I use my pizza cutter to make strips and then twirl the strips and bake in the oven.
Brie With Hot Pecan Caramel Sauce Recipe
1 5" wheel brie cheese
1/4 cup firmly packed light brown sugar
1/4 cup water
1/2 cup pecan halves
1/4 cup heavy cream
1 TBS unsalted butter
1 baguette -- sliced thin
Warm a sharp slicing knife in very hot tap water and carefully cut the top rind off the brie wheel. As a slicing guide, you can insert skewers into the cheese just below the rind. Let the knife blade rest on the skewers as you slice off the rind.
In a sauce pot combine the sugar and water; bring to a boil, reduce heat and simmer until reduced by half and sauce is dark brown. Remove from heat and add the pecans and cream. Stir well. Return mixture to a simmer and cook until slightly thickened, about another 4-5 minutes. Remove pan from heat and stir in butter.
Place the brie on a large plate. While it is still hot, pour the caramel and pecan mixture evenly over the brie, letting some of the caramel run over the sides of the cheese. Surround the finished brie with baguette slices and serve.
I am also having one on the 1st- I got a lot of great feedback- I dont know how to post the link but scroll down a bit on the board and you will see my thread- holiday cocktail party. I was wondering if you would give your recipe for pizza dip? Also can your hot plates sit out and still be yummy after a period of time or do they need to be consumed hot? I have learnt that with these types of parties you really need foods that can sit out and still tatse great. My only other suggestion would be to maybe add something hearty to the list. I was deciding between a ham (scliced and served with rolls, mustards etc.) to make finger sandwiches or the same concept but with pulled pork.
I hope it goes well! :)
The pizza dip is so easy it's embaressing

It is so delish that I want to lick the plate
