Candy thermometer necessary?

I don't have a candy thermometer, but I have a digital probe one. Can I use that for making candy? Nothing too fancy, just caramels and fudge?

    Sure, you can use a digital probe, just watch it carefully because it can hit the correct temp. very quickly. Good Luck!

      cookiehound here again. I wanted to add that it's important that you keep the tip of the probe in the middle of the liquid and not near the bottom of the pot or you will get a false temp. reading. You might want to invest in a candy thermometer because they have a clip that you can attach to the side of the pot so that you don't have to hold it there.
