        <content>I bought some gorgeous super-fresh oyster mushrooms at the farmer's market today. However, they're still attached to the base, which is like a big, white, spongy mass. I'm wondering if I can eat that too? It doesn't feel woody or tough at all... The mushrooms are very delicate and fine, the yellow variety. Not like the big gray ones, that can be quite chewy. The base is pretty big.

FYI I'm making a roast, and have thrown the mushrooms in together with some French purple fingerling potatoes, baby red and white sweet potatoes and carrot.

Alternately I could slice the base very fine and mix it with some eggs for an omelet...?</content>

      <content>I have always eaten the base of Oysters, tho' do account for when I prep them for a slightly denser meat.</content>

      <content>O.k., thanks! The roast is already done, but I might add the base tomorrow when I reheat, or use it some other way. Omelets are alright, but I really see it as a last resort. Nice to know I can also do something else! Maybe I'll chop the base very fine and make a mushroom risotto... mmm!</content>
