Thanksgiving (well, just stuffing) help!

I'm looking for a recipe for some for Thanksgiving. I was planning on making the mushroom and fennel bread pudding but some of my unadventurous flatmates have turned their nose up at that already.
Does anyone have any recipes for a good vegetarian stuffing? I also live in a small town and anything too out of the ordinary is difficult to find.
Your help is much appreciated, with it being the midnight hour and all!

Artichoke Parmesan Sourdough Dressing

Very tasty, about two stars for difficulty, may just become a tradition. It did at our house.
You can sub vegetable stock or broth for the Chicken stock, and omit the egg if necessary.
