There's absolutely nothing wrong with stuffing mixes, such as Pepperidge Farms or Mrs. Cuthbertson's. Just use more real butter and more onions than the directions call for and make sure your chicken broth is tasty. Some people like an egg but we don't; it makes it heavy in our opinion. Mix lightly. You don't want bread mush.

For a simple bread stuffing- You can buy stuffing bread- or use a loaf ( not sliced) of your favorite bread. You can toast or not toast. Sautee onions and celery in butter and oil. Break up the bread, add the onion and celery mix, . Add fresh herbs, or use the Bells Seasoning, salt and pepper. Add an egg to help bind, add some melted butter, and then add chicken stock until the stuffing is the consistency you like. Just taste as you go along, and taste as you go. Really simple, and can be tailored to your taste.
