Metro Continuing Education(downtown) offers an evening class on how to make temaki hand rolls. Unfortunately, you just missed the last one on Oct 18. You could contact them and find out when the next class will be. It's in their ethnic cooking program.
NAIT has an 'Asian Tour' cooking course that also may cover sushi, and many other cuisines (ie Malay, Thai, etc).
If you have a group of people, someone like Gail Hall of Seasoned Solutions could maybe put together a class for you.
I love making hand rolls, and have found them easy to do on my own, after one or two poor attempts. Follow the directions in a good cook book, and you should be fine to make casual sushi for family/friends.
