Chicken Stock Question

I make my own stock for a soup I serve on T-Day. If I make the stock on Monday and refrigerate it, it will be fine in there until Thursday, right? It won't go bad in three days?

  1. Your stock will be fine, just store it and seal it well.

    1. If you want to be super sure, just drop a couple of frozen freezer packs in the stock to cool it down real quickly before you put it in the 'fridge.

      1. It will be fine, but I would being it back to a full rolling boil for 3 minutes before using it on Thanksgiving. Be sure to separate and save the congealed fat (schmaltz) on top, as it is a very flavorful fat for sautéing veggies in.

          1. I think you'll be fine. But if you are worried, you can take out an insurance by reboiling the stock once on Tue. night. I seem to remember reading about master sauces passed down through the generation in Chinese restaurant, that have been around for decads! They just keep adding things and keep it brewing...
