Refrigeration needed for lemon tart or keylime pie?
I'm going on a trip soon andam taking baked goods along. I know cookies will keep, but what of a lemon tart (lemon curd in crust) or key lime pie (made with condensed milk & egg yolks, baked, no whipped cream garnish)? Will either one keep for 2 days unrefrigerated?
They are egg based and the key lime is a custard which usually means that refrigeration is a necessity. I don't think that it will spoil after 2 days unrefrigerated but it won't taste very good and may even go runny.
Those really should be refrigerated. The key lime pie could probably be frozen, but even then you'd probably only have a day after it comes out of the freezer.
Agree with the other posters, stilton. The egg content requires that they must be refrigerated. How are you traveling? Is packing with dry-ice an option?
