Recipe for Lemon-sage infused ice-cream?

It is not the season for ice-cream, I know. However I had the most amazing eating experience at a dinner party the other day: lemon-saged infused ice-cream.
Would any one happen to have the a recipe for it?

I have no recipe for lemon-sage ice cream specifically, but over the summer I made a lot of infused ice creams that came out nicely, like cinnamon. 2 c. cream, 1 c. milk, 3/4 c. sugar. Heat 1 c. cream with the sugar and add whatever. Heat without boiling for 15 minutes, remove from heat and add in the rest of the cream and milk. I let the whole mixture infuse in the fridge overnight before straining and running through the ice cream machine.

For sage, I'd probably coarsely chop it to release the oils but keep it big enough to strain out. I used 2 cinnamon sticks for 3 c. liquid - maybe 2-4 Tb. sage?

Also, it is definitely ice cream season! Pumpkin, peppermint, vanilla, ginger... something has to go with the holiday desserts!

Sounds like great basic recipe for infused ice creams. Would you use fresh or dried lemon sage?

I would lean toward fresh sage if you could get it.
