There are some very authentic looking Mexican restaurants on Main Street in Norristown. I have not tried any of these so I will let others comment. There is a "non gourmet" Mexican restaurant on route 202 (Dekalb Pike) in the K-mart shopping center just south of Germantown Pike. I am blanking on the name, but the food is good and not expensive.

Senora's in West Chester. Very casual, but very fresh food.

Senora's and El Sarape are both great suggestions. Also, a place on Rt.202 & Rt.1 @ Painters Crossing is pretty good. The name still escapes me. Good food, good prices.
