In recipes that call for sugar for caramelization -- will Splenda work the same?
Hallo! I just had a question, would anyone know any other low calorie carbohydrate that can be caramellized like sugar?
No, Splenda won't caramelize. The chemistry is too different from sugar.
Agreed - tried it and failed. Something to do with the changed chemical structure when sugar is converted to Splenda.
