ISO Knife Sharpener on the Westside
I'm looking for somewhere to get my knives sharpened on the Westside. Although quality and cost are considerations, frankly, long-ish operating hours are almost as important (I used a place on Little Santa Monica that was very good last time, but it ended up being a bit of a logistical pain).
Any suggestions for a place to get knives sharpened (I have a scallopped Santoku if that matters) that's open reasonably late?

I've used Sur La Table at the Grove several times -- including for a Santuko and they've done a good job.
Logistically it's pretty easy unless the knife sharpener isn't in that day (happened to my friend). When I've dropped my knives off in the morning they've been ready in an hour or so and obviously the Grove/Farmers Market is not a bad place to kill time.
I have also used the knife sharpener in the kiosk at SM and Fairfax in the Whole Foods Complex -- he seemed to do a good job as well and he did it while I waited.

re: Pei
The guy here does a craftsman like job with good knives, he is older with long grey hair, at least the last time that he sharpened mine! It's on the N side of the street, W of Beverly Dr. Check the link for a map AND picture of the exterior!

Yes, DIY. Cheaper, quick to do and takes less time than going to a sharpening service. Add a "steel" to keep the edge on:

I have taken my knives to the place in BH on Little SM and Rodeo (i think). That is probably the place you have been as well. I have also gone to Sur La Table at the Grove-- they have a good sharpener and they have pretty long hours. Also, I have seen knife sharpening at the SM Farmers Market and perhaps one of the other Farmer's Markets.
