Kitchen Remodel Recipes

Kitchen remodel starts Monday, and while I'd relish the chance to eat out every night, I know I'm going to get sick of it pretty darn quick.

For about a week, we won't have any appliances but the fridge. Sandwiches work, but only for a day or two.

I thought I might cook a lasagne and heat it up, but now we won't even have a microwave (gasp).

Any suggestions?

    Do you have a toaster oven? Make it your friend!

      No toaster oven. I'm serious. Only the fridge. No sink, no dishwasher, no stove/oven, no mircrowave. Nada.

      It's a major remodel, knocking out walls, soffits. We're pretty much living/eating in the living room, cuz the kitchen and dining will be torn out.

      We figured paper plates and plastic ware.

        I'd buy a cheap counter top microwave in the interim. Seriously. AND a toaster oven. Put them in another room. Otherwise, you could always join the raw foods movement! Good luck w/ the remodel.

      Do you have an outdoor gas or charcoal grille? That would solve your problem. Anyway, you can also do things like buying a rotisserie chicken at the grocery store and using it to make a hearty salad like caesar with chicken. Then make chicken salad with the rest.

          Cheese and crackers. Fruit and raw veg. Cold cut plates. Nuts and dried fruits. Get a coffee pot and use it to heat up hot water for pot noodles or instant oatmeal. Get an electric skillet and use it on the coffee table in the living room. :) Tinned kippers, tuna salad. smoked meats (yum!). Get a grill going outside (you can grill even in the winter!)

            grill or crockpot...I lived fourteen months with these and a fridge!

              I never thought about the grill. Silly me! I'm in Austin, Texas. It's 82 degrees today. Of COURSE. Sometimes you can't see the forrest for the trees; huh?

              We set up a little cart with a toaster oven and coffee machine in the livingroom. Can't get through a remodel without coffee. You could also get a hot plate. We were only without a stove for a week, so I boiled pasta at a neighbor's house once. With JUST a fridge you seem to be stuck with salads and sandwiches. Cheese and pate and a nice bread? Humus and pita? A Greek salad with olives? Bean or lentil salads? Guacamole? Picnic food, in other words.

                We have a rice cooker, and I would do one-dish dinners--rice with chicken, ginger, peas, a dash of soy sauce...
