They will be fine if you put them into the pie raw, but even better if you toast them lightly first. And *please* don't use corn syrup in your pie. Cane syrup will make it a whole lot better.

I have 9 pecan trees in my back yard and I process them myself and when making a pie,
cookies, or cakes I always use them raw without pre-roasting them. I think Ida-Red
told you straight. use them as they are.

You didn't say how much she bought, but pecans freeze really well. I always keep some in the freezer that I can pull out to top pancakes, bake into pies, cakes, cookies, etc. Spiced pecans around the holidays are always a hit and make great gifts.

I wouldn't bother toasting them if they are going into a pie. The oven time is enough toasting time for them and they might even end up tasting a bit burned if they were toasted ahead of time.

FYI, that's typically how you buy pecans. They don't normally come roasted like many other nuts (at least not around here). Most cooks that I know use them as is. However, I do agree, they benefit from a quick oven toasting, but be very, very careful not to scorch.

I would suggest toasting them. I did that last night and it worked like a charm.

can go either way. Toasting brings out the flavor
