Funky Soups

I'm planning a party and want to have soup and mashed potato shooters as hors d'eouvres - any ideas on something different and delicious?

just curious, but how do you "shoot" mashed potatoes?

You are correct - not really a shooter! I'd do it w/demi spoons but now am thinking of doing a mashed potato parfait instead (in martini glasses)!

you could layer the taters with danhole's cheeseburger soup as your parfait if you use a wine glass!

What about a really awesome gazpacho? No need to worry about keeping it warm.......

What about a good steak soup. I don't have a recipe on hand, but I have had it before and it is so good. A sloppy stew type soup. Or a cheeseburger soup? I do have a recipe for that. Not terribly "gourmet" but very tasty.

CHEESEBURGER SOUP

1 lb. ground beef
3/4 c. chopped onion
3/4 c. celery
1 tsp basil
1 tsp. parsley flakes
3 c. chicken broth
3/4 c. carrots
4 c. diced potatoes
4 Tbsp. butter
1/4 c. flour
8 oz. Velveeta, cubed
1 1/2 c. milk
Salt and pepper

In a 3 quart saucepan, brown beef, onions, celery, basil, and parsley. Drain grease off. Add broth, potatoes, and carrots. Bring to boil and cook until vegetables are tender. In a small pan, melt butter and add flour. Whisk well. Add to boiling soup. Cook 2 minutes and reduce heat. Add cheese, milk and seasonings.

Serves 4 - 6 people

will the guests be "shooting" the soup? if so, i would keep it of a smooth consistency -- without things that might inadvertently cause choking, or something going down the windpipe (like unchewed ground beef).

chilled or warm curried carrot soup is so savory -- and smooth and creamy.
