Brunch ideas needed
I'm arranging food for a baby shower (about 15-20 people attending). I have the more traditional breakfast foods down (coffee cake, frittata, etc) but am having trouble figuring out the more "transitional" lunch timey foods. Limitations: the attendees aren't very adventurous eaters and the budget is small. Any ideas are appreciated!
Two thoughts: salads and tea sandwiches. Both are tasty, both are safe choices.
For salads you could do a big green (with roasted veggies and goat cheese, or blue cheese and pears, or just a nice lettuce mix), and maybe something like a roasted potato and green bean.
Tea sandwich options are endless, but off the top of my head: roast beef and caramelized onion, turkey and avocado, and cream cheese and cucumber would be a classic and easy roster.
In the spirit of Thanksgiving, you could do a beautiful chicken salad display using dried cranberries, roasted chicken, different colored grapes, toasted pecans, some curry powder, mayo, celery. Chicken salad is more of a lunch dish, but have enjoyed it at many a brunch. If you have a large platter, you can do arrangement and really make it a focal point for table. Chicken is usually inexpensive, if you want to be thrifty, you can use leftover Thanksgiving turkey! If you need more specifics, let me know.
