Need a recipe that includes cured meat
Saturday night, we're having an Iron Chef competition at the neighbors and we've been told to bring a recipe that involves cured meat. I'm at a loss. Please help me....
Did you want something upscale or something? If not, there's always bacon wrapped shrimp with cheesy grits. For fanciness, I turn to Thomas Keller for his delicious sweet potato and bacon angolotti (sp? sort of like ravioli) served with sage cream, browned butter, prosciutto, and fried sage leaves.
If you need something portable - you could make your favorite macaroni and cheese and include diced salumi or crisped pancetta or guanciale in it.
If not, bucatini all'amatriciana is easy to make for a group, and you can use pancetta or guanciale and good quality canned tomatoes.
