Need a recipe that includes cured meat

Saturday night, we're having an Iron Chef competition at the neighbors and we've been told to bring a recipe that involves cured meat. I'm at a loss. Please help me....

  1. figs or dates stuffed with goat cheese wrapped with prosciutto.

    1. Did you want something upscale or something? If not, there's always bacon wrapped shrimp with cheesy grits. For fanciness, I turn to Thomas Keller for his delicious sweet potato and bacon angolotti (sp? sort of like ravioli) served with sage cream, browned butter, prosciutto, and fried sage leaves.

      1. When you say 'cured meats' salami and dry sausage immediately come to mind. Google "Utica Greens" for recipes and use salami or dry sausage there. You can also try making prosciutto bread. Prosciutto is certainly a cured meat.

        1. If you need something portable - you could make your favorite macaroni and cheese and include diced salumi or crisped pancetta or guanciale in it.

          If not, bucatini all'amatriciana is easy to make for a group, and you can use pancetta or guanciale and good quality canned tomatoes. If you have a good Italian cookbook, such as Marcella Hazan's "Essentials of Classic Italian Cooking", there will be a recipe there, or here is one:

            Do you have a rockin' mac and cheese recipe. I've had super good mac and cheese, but I've never made it.

              I usually make this one from Barefoot Contessa, but I only use tomatoes when there are good tomatoes to be found; otherwise, I leave them off.
