Looking for some kind of cheese class....

Hi. My sister loves cheese and I want to get her some kind of tasting/making class for christmas. Any suggestions? Thanks a lot.

  1. I just said this in another post, but here it goes: The Washington Post under the Arts and Living tab, in the Food and Dining Section, has a huge list of cooking classes, that is very helpful and explanatory. It has all sorts of different types of classes.

    You might also call the Cowgirl Creamery?

    1. You might want to contact Cowgirl Creamery (the store in Gallery Place/Chinatown) to see if they ever hold such a class. If all else fails I know they have a great sounding "Cheese of the Month" type club! :)

        Cheesetique in Alexandria has once a month cheese classes. Very friendly staff there...

      2. Also check L'Academie de Cuisine. I've taken a few classes there and loved them.
        Note: I don't think I've ever seen anything there on making cheese, but they likely have a class on cooking with cheese.
        If there isn't a specific cheese class listed for now you can always get her a gift certificate...

        1. Cheesetique's classes are great. Fun, reasonable ($25), usually with a theme (blue, cow's milk). I did their ancient cheeses classes, and will do the holiday cheese class next month.

            I ordered a beginner's mozzarella/ricotta kit, and it's so fun and easy to make your own mozzarella! If everyone knew how easy it was, no one would buy mozz from the store. I heard about her in Barbara Kingsolver's new book "animal, vegetable, miracle" and her family took a class there, but it's kind of far away :)

              I just ordered a cheese-making kit from there... where can you get non-ultra-pastuerized milk in the Northern Virginia or DC area needed for the recipes? I'm very excited to try out the homemade mozzarella!

                various sources give different advice - basically the only way to get completely non-pasteurized is to join a co-op and in essence buy a share of a cow. there were rumors here a while back, and even though the merchants mentioned know my face, (8 years once or twice a week?) they clammed up.

                Bittman claims pastuerized and even low-fat is ok and I saw somewhere (there?) a tip about using something I'll review my notes... I've got all the gear lined up and intend to dive in one of these days.

                the big sticking point in town is that only Whole Foods seems to carry rennet (powdered by spices). I found the right thermometer (degree range wise) for less than 10 bucks at Hill's Kitchen - about 20 anywhere else for one only close to what's needed.

                  Look for milk from South Mountain Creamery (I'm sure there are others close to DC) I checked out their website and it notes that there are many locations in and around DC who sell their milk. You can contact them at 301-371-8565.
                  If you would like to try making Mozzarella with raw milk you can buy it legally at any number of places in Pennsylvania. I'm not certain on the particulars but I believe Amish dairies have permission to sell raw cow and goat's milk. I have seen both for sale at the Redding Terminal Market in Philadelphia. I'd recommend you stick with full-fat milk for the best flavor and texture.
